Double Chocolate Coca Cola Cake

1 cup Coca Cola (real thing, not diet)
1/2 cup oil
1 stick butter
3 Tablespoon cocoa
2 cups sugar
2 cups flour
1/2 teaspoon salt
2 eggs
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla

Frosting:

1 stick butter
3 Tablespoon cocoa
6 Tablesppon of cream or milk
1 teaspoon vanilla extract
3 3/4 cups confectioner's sugar

In a saucepan, mix Coca Cola, oil, butter and cocoa and bring to a boil. In another bowl, combine the sugar, flour and salt. Pour the boiling Cola mixture over the flour mixture and beat well. Add the eggs, buttermilk, soda and vanilla and beat well. Pour mixture into a greased and floured 13 x 9 inch baking pan and bake at 350 degrees or 20 to 25 minutes. Remove pan. Cool for about 10 minutes before frosting.

Frosting: In a saucepan, combine the butter, cocoa, and milk. Heat until the butter melts. Beat in the remaining ingredients and spread on the cake while it's still warm. Enjoy

A patient brought us in these cookies and they were wonderful. I asked her for the recipe and she gave it to me... This has alot of butter in it but if you don't eat all of them and share them with others you will be ok! Paula Deen has a recipe almost exactly like this but she didn't put nuts in hers, she used a little more flour and a different cooking time and temp. I'm going to cook these first this way then try Paula Deen's recipe.  I know these are good but it's the nuts that I like and the crunch too.

Potato Chip Cookies (These are a lot like Pecan Sandies or Wedding Cookies)

4 Sticks Butter (salted or unsalted, whatever you have on hand)
1 Cup Sugar
Cream the above two ingredients together

Add to the creamed mixture:
1 tsp vanilla
1 cup crushed potato chips
3 cups flour
1 cup pecans or walnuts

Place on ungreased cookie sheet and bake 10-15 minutes @ 350 degrees. When edges are brown, you can remove from the oven. Cool and sprinkle with powdered sugar

I got these recipes from Pinterest and Facebook. I have no idea where the recipes originally came from or I would give credit to the people that came up with them.  I have tried both of these and they are both great.  I love cake and brownies but I don't like making a whole cake or batch of brownies as I would eat the whole thing!  This is a quick fix for me.  I can have a cup of cake or brownie occasionally and not feel guilty. 

1-2-3 Cake. Cake in a Cup

You need two boxes of cake mix. One can be any flavor you prefer, but the other MUST be Angel Food cake mix. Mix them together (shake them in a big bowl). Then simply store the mixture in an airtight container until you get the urge for dessert. Then just put three Tbsp. of the dry mixture in a big coffee mug and stir in 2 Tbsp of water. Microwave it for one minute and you will have a single serving of cake! Top with fruit, ice cream, whipped cream or whatever! Awesome for those of us who want something sweet every now and then without making an entire cake!!!


Brownie in a Cup Microwave recipe

INGREDIENTS

•2 Tbs vegetable oil
•2 Tbs water
•Few drops vanilla extract
•A dash salt
•A pinch instant coffee powder (optional)
•3 Tbs granulated sugar
•2 Tbs unsweetened cocoa powder
•2 Tbs all purpose flour

INSTRUCTIONS

In a 12 oz coffee mug, mix water, oil, salt, vanilla and coffee, if using. Whisk well.
Add cocoa powder, whisk well. Add sugar, whisk well. Add flour, whisk well.
Microwave for 60-75 seconds: 60 seconds for a molten bottom, 75 for uniformly done. I normally choose 60.
Enjoy with a spoon and a scoop of vanilla ice cream. Careful, brownie will be hot.

Chocolate Cake in a Cup

I just did the cocoa powder and it was good, next time, I want to add nuts.
 

Cook Time: 2.5 min



Servings: 1 cup


Optional ingredients you might want to try:
semi-sweet chocolate chips, white chocolate chips, nut pieces, crushed candy cane or peanut butter chips.
Ingredients:
  • 4 tablespoons flour
  • 4 tablespoons sugar
  • 2 tablespoons unsweetened cocoa powder
  • pinch of salt
  • 2 tablespoons vegetable oil
  • 3 tablespoons milk
  • 1 egg
  • Splash of vanilla or other flavoring, cinnamon or peppermint

In a medium sized mug (be sure it is microwave safe), add the vegetable oil, egg, milk and whatever flavoring you are using. Mix up these ingredients until well combined.
Add the flour, sugar, cocoa powder and salt. Again mix until well combined. If you are using any of the suggested add ins, now's the time to add them.
Cook in the microwave on high for about 2 1/2 minutes depending on your brand of microwave.
You can use cake flour or all-purpose flour (or even self-rising flour), other flavorings instead of vanilla, water instead of milk, change baking time to get the amount of moistness you prefer..Another version is to substitute pudding mix for the cocoa powder or pancake mix for the flour."

Apple Dumplings

I got up this morning and made this recipe from Heidi. She calls it Apple Dumplings but her family also call it Apple Crack. Ha, ha, after trying it, I can see why!  It's wonderful!  I used Honeycrisp Apples for this and they were a little too sweet. I'll make it again with Granny Smith apples. Heidi did say to make it with tart apples but these were all I had on hand....

Apple Dumplings by Heidi
Ingredients:
2 Tart Apples- I used Honeycrisp apples and it was a little too sweet so next time, I'll be using tart apples such as Granny Smith...
1 Prepackaged roll of "original" Crescent Rolls
1/2 Cup Butter
1/2 Cup Sugar
1/2 Cup Vanilla Ice Cream

Peel the apples and cut into 4 pieces, you will have 8 good chunky pieces.
Open the crescent rolls and wrap dough of one crescent around 1 apple chunk. Some stretching is needed, but they should cover the apple easily. Spray a baking dish with non-stick spray. Place all dough covered apples in dish.  Next, melt 1/2 cup Butter and 1/2 Cup Sugar in saucepan. Bring to a boil and heat until sugar is melted. Then remove from heat and stir in 1/2 Cup Vanilla Ice Cream into the Butter/Sugar mixture. Stir until melted. The ice cream is the essential surprise ingredient.  Pour mixture over dumplings and bake in a 350 degree oven for approximately 40 minutes.

Delicious and Easy Angel Food Cake (Low cal too!)
Betty Crocker Angel Food Cake Mix
1-20 oz. can crushed pineapple (Do not drain-use all the liquid as this is the only liquid you will have for this cake)
Mix all together and follow package directions to bake your cake. That's it...Enjoy. This is a great cake to take to family gatherings or quilt parties.

Sweet Potato Casserole
Ingredients:
3 cups mashed sweet potatoes
2 eggs
1 cup sugar (if you don't want it as sweet, you can just use half and it will still be ok)
1/2 cup butter (softened)
1 tsp. vanilla

Topping:
1 cup brown sugar
1 cup chopped pecans
1/3 cup flour
1/3 cup butter

Directions:
Mix first ingredients and pour into a buttered dish.
Mix topping until crumbly, and put on top of sweet potatoes.
Bake 30 minutes in a 350oven
This is now one of my favorite recipes to make for a special occasion. I hope you try it...
